Hi there, Is there any way to learn how to level books using the F&P system? Are there any online classes etc to learn the methods?

If I recall, the F&P book, Guided Reading Good First Teaching (white cover) had a good description of leveling. There are several places in LLI where text complexity at different levels is detailed. If you can internalize/memorize those criteria, you'll be able to level anything.
